  • 2 200g Beef Steaks (ribeye or sirloin)
  • 200 g Brussels Sprouts (trimmed and halved)
  • ½ cup Heavy Cream
  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • 1 minced Garlic Clove
  • ½ tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Paprika
  • ¼ tsp Nutmeg (optional)
  • 1 tbsp Freshly Parsley (for garnish)

Instructions

  1. Season the Steaks: Season both sides of the steaks with salt, pepper, and paprika. Let them rest for 5-10 minutes at room temperature.
  2. Cook the Brussels Sprouts: Heat 1 tbsp butter and olive oil in a pan over medium heat. Add Brussels sprouts cut-side down and cook for 4-5 minutes until browned. Toss with garlic and cook for another 3-4 minutes until tender. Season with salt and a pinch of nutmeg. Remove and set aside.
  3. Cook the Steaks: In the same pan, add the remaining butter and heat to medium-high. Sear the steaks for 3-4 minutes on each side for medium-rare, adjusting for desired doneness. Remove from the pan and let rest under foil.
  4. Make the Cream Sauce: Reduce heat to medium, add heavy cream to the pan, and stir to scrape up browned bits. Simmer for 2-3 minutes until the sauce thickens slightly.
  5. Serve: Return the Brussels sprouts to the pan and coat them with the cream sauce. Serve the steaks alongside the Brussels sprouts and garnish with fresh parsley.
