Steak and Egg with Butter sauce

  • 170 g Sirloin Steak
  • Salt and Pepper to taste
  • 35 ml Melted Butter
  • 1 large Egg
  • 30 g Butter (room temperature)
  • 15 ml Hot sauce (optional)
  • 1 tsp Green onions, sliced

Instructions

  1. Pound the steak to a 6-mm thickness, season with salt and pepper. Flip the steak and repeat with the other side.
  2. Heat 30 millilitres of the melted butter in a pan over high heat. Cook the steak for 1 minute on each side, then remove and set aside.
  3. In the same pan, heat 5 millilitres of the melted butter, crack the egg, and cook until the white is crispy and golden. Place the egg on top of the steak or next to it.
  4. Add 30 grams butter and 15 millilitres hot sauce (optional) to the pan. Stir until the sauce is smooth. If it’s too thick, add water.
  5. Spoon the sauce over the steak and egg, and garnish with chives.
