Mushroom Omelette

  • 4 Eggs
  • 2 Tbsp Cream Cheese
  • 1 pinch Salt
  • 1 Tbsp Butter
  • ½ Tbsp Olive Oil
  • 1 clove Garlic, crushed
  • 1 sprig Thyme, leaves chopped
  • 140 g White Mushrooms, sliced
  • 85 g Brown Mushrooms, sliced
  • Black Pepper, to taste

Instructions

  1. In a medium sized-bowl, beat together the eggs, cream cheese and salt.
  2. Heat a skillet over a medium high heat and oil it with a bit of Beef Tallow.
  3. Once your skillet is nice and warm, pour half of the egg mixture into the skillet.
  4. Cook for about 40 seconds or until just set and slide the omelette onto a plate. Repeat with the remaining egg mixture.
  5. Heat the butter and olive oil in a separate skillet/pan and add the garlic and thyme and cook until fragrant.
  6. Add the mushrooms to this skillet and cook them until softened, roughly 7 minutes and season to taste.
  7. Spread the mushrooms over the two omelettes and roll it closed to encase the filling.
  8. Serve warm and enjoy!
